One of the recipes I’ve fixed recently was Peace, Love & Low Carb’s Bacon Cheeseburger Soup. It really tasted like a cheeseburger!
The recipe called for 1.5 pounds of ground beef. I had two one pound packages so I used them both and added a bit more of everything so we would have leftovers. I only had one container of beef broth so I added an extra can of tomatoes. I’m not sure that changed the taste but mine is definitely more red than the picture show on the recipe page.
It was delicious and I’m so glad we have leftovers. Today and tomorrow are going to be cold. Tomorrow is going to be cold with a chance of rain. That will be a good day to have our leftover soup!

I made a cheeseburger soup a couple of weeks ago for the first time! Mine had pureed cauliflower mixed into it along with shredded carrots and celery, I’m always trying to get my boys to eat more veggies. This one looks yummy, except the dairy would be a problem for my lactose intolerant kiddo. Ah well, someday.

It looks and sounds like a winner. The package of ham I took out turned out to be the bone piece, so I’m making bean soup tomorrow.
