We’ve been having one meal a day for two days, then breakfast and a mid-afternoon meal for one day and we keep repeating that cycle. The days when we have breakfast, it’s very hard for me to get my macros/food right. I only get 7 net carbs per day. Vince gets like 200 . . or so it seems when I’m trying make the meals work out.
Since he has Carb Manager also, I put the food into my app, then tell him what foods I’ll be cooking and he can put those into his Carb Manager and manipulate his numbers and add things like nuts, berries, keto bread . . whatever he wants . . to get his numbers.
Breakfast:
For breakfast, if I fix eggs and bacon, that’s pretty easy but this morning, I wanted French Toast Egg Puffs . . just a little variety.
I made them in the mini muffin pan and we ended up with enough to have for another breakfast plus a few more.
I added a few toasted pecans and we use the Lakanto sugar free “maple flavored” syrup. It isn’t bad but it definitely isn’t real maple syrup.
Snacks:
In order to get the fat and protein I needed, since breakfast wasn’t much fat and wasn’t much protein, I added half a can of sardines and some cheese for snacks.
Dinner:
Dinner tonight is leftover Pork Eggroll in a Bowl and a salad.
Even with manipulating and adding a bit here and taking away a bit there, I still came up one short on net carbs, one short on fat, one short on protein and 5 over on net calories. It’s so much easier with just one meal! Plus, one meal gives me more knitting time.
As far as weight loss, I had been stuck on the same amount for four days! It doesn’t bother me because I know if I had weighed myself an hour earlier or an hour later, it probably would have been different but this morning, I was down 1.1 pounds so that made me happy.

I don’t think water is an issue. Since I’ve quit drinking Dr. Pepper, I drink probably 10 glasses of water a day. I keep my insulated cup by me and am drinking water all day. They say with this diet that you do have periods when things slow down. I’ll be happy to consistently lose 2 pounds per week and I know that every day I will not see a drop. I’m counting 5 pounds the first week so that means I’ve lost 6 pounds for the next week and 1/2 so I’m still doing great. It’s just a bit frustrating to see good losses every day and then nothing for three days but I’m committed and will stick with it.
