I knew the Pork Eggrolls in a Bowl was going to be terrific and it was!
We also had roasted brussels sprouts but this time I chopped them and did them in the countertop convection oven because I could do more of them then I can do in the air fryer. I often have to make two batches in the air fryer.
They were good too.
Today we started our third week of the diet. Smooth sailing so far!

I just pinned that recipe recently. And you are making me want to jump back on the Keto bandwagon. Diet requires extra effort and focus and I am so busy that I decided to take a baby step and limit sugar come the new year. Life got stressful and will that went out the window (along with reading your blog but I am slowing catching up lol) Starting back on it today though. Be conscious about how much sugar I consume. I’m sure keto will follow when work life isn’t so stressful.
