Bacon is one of those things we can eat on keto, though proteins are limited. Before starting the diet, I thought proteins were not really limited, but they are.
We much prefer buckboard bacon to storebought bacon. Last week United had boneless pork butts for .97/pound. Definitely way less than storebought bacon, even including the cost of the ingredients to turn it into bacon.
I found this recipe at Texas Cookin’ at Home and it didn’t have any sugar/syrup added. Several of my favorite recipes have sugar or maple syrup and, though it doesn’t make the bacon nearly as sweet as some of the bacons we’ve bought, there’s no need to add the carbs so that’s the recipe I’m using.
It will sit in the fridge til probably Thursday or Friday. Then I’ll take it out, rinse it and soak it to get some of the salt out, then let it dry out in the fridge overnight and smoke it the next day.
We’ve been out of buckboard bacon for months. I don’t know why I didn’t make it sooner.

It sounds good, but I’m too lazy to make it. LOL I love the sugar bacon that Arby’s has ever spring for a month or so. It’s so good on ham and Swiss.
