I hope you don’t get tired of me posting the keto recipes. Even those who have no interest in the keto diet could probably use a bit more “low carb” in their lives so I’m only posting the ones that I think are delicious and that anyone would like. I don’t think anyone would think these sausage rolls tasted “diet”.
Breakfast is always the struggle for me but I’m finding some great keto breakfast recipes online. This morning I fixed Low Carb Sausage Rolls. The recipe shows them more like a dinner roll but I was thinking the bread might get done before the sausage so I cut the roll into thinner slices.
Also, I knew I didn’t want to use a whole pound of sausage so I probably used about 1/3 of the log and 1/2 of the dough. I took the other half of the dough and made little flat rolls that can be used for sandwiches. The bread dough was almost exactly the same as the dough recipe for the bagels.
The sausage rolls were delicious and reminded me almost exactly of the sausage pinwheels I’ve made for years and years.
Again I forget that I can’t eat as much and only ate one egg and one pinwheel.
We’ll make these sausage pinwheels again.

Thank you for posting the recipes. Not on the keto diet but I am trying to eat less carbs and appreciate your tasty recipes. I am amazed at how little you eat though! And you are not hungry? Keep up the great success!

I am not! That’s one of the crazy things about this diet. I just takes away my desire to eat. Unfortunately, the desire for Dr. Pepper has not gone away. 🙁

These look delicious! Will definitely try them soon. My husband does Atkins and every few weeks he makes up a big batch of a recipe from pioneer woman. I don’t remember the name but they are eggs, sausage and veggies baked in a muffin tin. He makes a big enough batch and then after cooked puts four muffin cups in a baggie and freezes them. We take out a baggie each night from freezer and put in the fridge and then just microwave for breakfast. Delicious and so quick for mornings on the go.

I checked Pioneer Woman and the recipe is called “individual sausage casserole”. Looks good and easy to make a bunch.

I like seeing new recipes and websites to look for even more items to cook. I am working on a Whole 30 program so I am off grains and dairy, but I am bookmarking a lot of recipes to try once I can eat those things again.
Just curious, couldn’t you make a log of the sausage, cook it to a certain degree, let it cool and then roll it in the pastry to bake? At least, some of the extra fat & juices from the sausage would be baked away first and wouldn’t soften or mess up the pastry.
Gees, now I’m hungry – time to make my own sausage, veggie and egg casserole for lunch.

The Aldi sausage hardly has any fat. In fact, when I’m just frying it up for breakfast, I’ll usually add a bit of butter to the pan because it doesn’t even have enough fat to fry up good.
It was very easy to make the thinner slices and since I only ate one, I’ll keep doing it that way. That way, the leftovers are also good for quick, very light snack (instead of eating the bigger roll).
