Roast beef was on the agenda for tonight. It’s easy for me to not overeat when we have roast beef. I like it but . . I don’t love it.
I cooked the roast in the pressure cooker. I had to get a hair cut today so I started it before I left, did some shopping and it was ready when I got home.
I knew we were having cauliflower rice but I wasn’t sure what to do about gravy. Since mushrooms are high in potassium, I wanted to add mushrooms to the gravy. I ended up straining off most of the fat from the roast (there was a lot), adding some yogurt to thicken it and make it creamy.
In a skillet, I sauteed the mushrooms.
Then I added the mushrooms and some shredded beef to the “gravy”.
The beef, gravy & mushrooms were served over cauliflower rice. We also had a mixture of sauteed beet greens and spinach, with olive oil and goat cheese.

Roast beef for me is a practically mooing piece of prime rib. Anything well done is a stew, pot roast – or something like that!

To me, roast beef (prime rib or sirloin tip) must be roasted in the oven. I do make pot roast, but it’s a different cut of meat (such as chuck) and is cooked on top of the stove in a pot. I don’t have a pressure cooker.
