Vince is 100% (more like 500%) into the keto diet. Our TV has not been on once in the past two days except to watch keto videos. Some of what we’re reading may be hype but there are enough doctors speaking at conferences who have shown amazing results with improving so many areas – not just cholesterol, blood pressure, but brain health, headaches, inflammation. A lot of those improvements come from losing weight but I’m totally convinced carbs are just bad. There will come a time when we’ve lost the weight we need to lose and we’ll no longer diet to lose weight but, at least now, I feel like low carb is the way we’re going to live from now on. Yes, we will have a slice of birthday cake, and fresh fruit will be added back in limited quantities.
Vince is reading labels. He said he doesn’t even mind throwing stuff out or donating it. For Vince to say that . . that’s a huge step. He said “It’s just poison. I’m glad to get it out of the house!” And I’m glad to free up cabinet space.
Someone mentioned “keto flu” in a comment yesterday. Keto flu is very real and very avoidable. I’m not going to give advice on here because it borders on medical advice but you can find it on the internet.
More astounding . . Vince is ready to cook. He wants to make bread. He’s found several recipes so this morning, we’re off to find arrowroot flour. I’m skeptical that we can find it in town but he thinks we can so we will go searching.
His big find today is apple cider vinegar. We’ve always drank a bit of it every day but Vince now believes we should have 1 – 2 tsp. acv with a glass of water before every meal.
It’s so much more fun . . really, we are having fun . . when we’re both doing this together.

Search for 90 second bread–made in the microwave and so far the only semi-acceptable substitute I’ve found. It needs almond flour and is very tweak-able to add fiber and spices. It’s quite an adventure to be on keto. Also, search for Almond Ricotta Cookies—so good! I envy that you don’t like chocolate—that has been a problem for me.

Having “cleaned” my kitchen while on the Whole 30 program, I can relate to clearing out the old stuff and reading labels on everything. I still read the labels to make sure of the amount of sugars and chemicals. It is useful that more companies are putting labels on their products as being paleo or Whole 30 compatible, There are even some restaurants that are now labeling the menu options. I guess some ot them got tired of people asking about how the meal was prepared.
One suggestion is when you lose enough weight so that the clothes are falling off, toss or donate them! And then buy something that fits. I know you work out in the garden, but there are so many “work” clothes that you need. And, wearing a smaller size does help as a reminder about overeating.

Have you read anything by Maria Emmerich? I really like her blog and cookbooks. Her last one was for the Instant Pot. I’ve made several recipes from it and they’ve all been very good!

Not all carbs are bad. Fresh or frozen vegetables and some berries are mostly OK. A lot of fruit needs to wait until the weight is off, and for me (mild diabetes#2) nothing packs on the pounds and raises the blood glucose faster than most fruit. And I guess things made with flour or sugar should be no-nos for most of us all the time. I do my best to avoid HFCS as well.
If you can’t find that arrowroot flour in your local stores you can surely find it on Amazon. Is there anything they don’t sell?
