Dinner tonight was Easy Spicy Coconut Shrimp Over Cauliflower Rice. It was amazingly delicious . . and easy! I told Vince . . let me know which recipes you want me to make again. One bite and he said “YES! Make this again!” About halfway through, he said “Please don’t lose this recipe!”
My pictures don’t do it justice.
I did a few things differently from the recipe.
First, as you might guess, I added quite a bit of Slap Ya Mama. I still like it and that was the first cajun spice I saw.
Second, I didn’t add the raw shrimp to the pot with the other ingredients. I seasoned those with Slap Ya Mama, then sauteed them quickly in sizzling butter.
Third, instead of adding red pepper flakes, I added one sliced jalapeno.
This was a great recipe – diet or no diet.

What is cauliflower rice? If I don’t like cauliflower, would I like the rice? I saw a pizza today with cauliflower bread crust. I didn’t buy it. Nor the Mac and cheese with bacon pizza. Just didn’t seem right.
