After having been gone for 24 days, I didn’t have a clue what was in the kitchen. Since Vince was here 17 of those days, he had used things, added things so first thing this morning I took a very quick (and probably totally inaccurate) inventory of the kitchen and we were off to town. Vince said there’s a smoked turkey breast and a bone in, spiral cut ham in the shop fridge, along with at least one turkey in the freezer.
Last week I had seen a recipe for Easy Spicy Coconut Shrimp over Cauliflower Rice and wanted to make it when we got home so that’s what’s on the menu for today. I’ll probably steam broccoli and serve that as a side. Cauliflower rice, shrimp and broccoli . . sounds good to me.
First stop was the post office to pick up mail. That was kinda scary. I had not planned on us being gone last week and had ordered several things that were on sale after Christmas, as well as restocking some of the vitamins that I mail order so I knew there were going to be quite a few boxes. The mail lady said “You have your own rolling cart full!” Yep . . it was full but the big boxes were Vince’s. Thankfully, only two boxes of yarn and I’ll get pictures as soon as my phone charges.
Then we went to McDonalds’ for scrambled eggs and sausage. Vince is so impressed that we can eat there for less than $7 total.
Then to Walmart where I bought the groceries I knew Aldi wouldn’t have .. then to Aldi for everything else we needed.
We’ve put away the groceries; we’ve gone through the mail.
Boneless, skinless chicken breasts were on sale at Aldi so we bought several packages. I vacuum sealed the chicken into bags with 4 breasts per bag. That will give us a meal and leftovers for a salad or two. Then Vince said “Want to vacuum seal the sausage we brought back from Louisiana?” Sure . . the vacuum sealer was out so I did that.
Then I got the kefir going again. It may well be time for a nap now.

Your morning was WAY busier than mine, and I thought mine was busy. =) It takes some work to get everything back right. I was tempted by the chicken, but I still have canned chicken, so I’m not getting more.
