Since I couldn’t post pictures last night, and now I can, this is worth sharing.
The tenderloin itself is wrapped in a layer of thinly sliced (almost shaved) apples, then onions, then bacon.
Probably not terribly healthy, though the fat did drain off, but it was delicious. For tonight, he’s smoking a prime rib. Chad said they’re worth buying just to watch Addie’s reaction. She calls it “that good cow meat!” and she’s very excited to be having it for dinner. I’m pretty excited about it too. Chad is a great cook and he loves cooking.
I’ll fix the salad I forgot to fix last night, and probably baked potatoes. The green bean bundles I made the other night were a big hit but I don’t think I have any more whole green beans and I’m not planning to go to the store today so . . baked potatoes and salad .. maybe some carrots . . that’s what’s for dinner.

I’ve been wanting a prime rib for a month or so. I would love to know how Chad smoked his. I’ve never attempted to smoke one as I’m afraid of ruining an expensive piece of beef. Thanks.

Sounds good to me!! Remind me to tell you the story of our prime rib search. The chef that was a the country club years ago made the best you have EVER tasted. Will tell you more next time I see you.

Addie can have my prime rib, but that tenderloin looks perfectly wonderful and I keep thinking about the taste with the apples and onions smoked in. Yum!
