It’s too bad there aren’t photos of our dinner. Chad took a pork tenderloin, seasoned it. Then he sliced apples very thin . . almost like shaved, did the same thing with onions, packed those all over the outside of the tenderloin, then wrapped it all in bacon and smoked it. He set it very low and smoked it for several hours, then we turned the heat up til the internal temp got to 155 degrees. It was so good. I did take pictures so, someday, I’ll show them . . hopefully tomorrow.
I heated up canned black eyed peas, made the brussels sprout chips and totally forgot to make the salad.
Chad tried the brussels sprouts but didn’t like them. Nicole liked them a lot.
Our New Year’s meal was good. The holidays are over. A few more days and I’ll head home. It won’t be easy leaving but it will be good to be home with Vince, sleep in my own bed, sit in my own chair and best of all .. have some say about the temp in the house!

You mentioned the low temps in their house. I couldn’t stand that. A couple years ago I moved our thermostat up to 69 & I’m about ready to move it up another notch. Life is too short to spend months freezing.
