For the hash brown/egg cups I made for Christmas, I needed frozen hash browns. I usually grate potatoes to make hash browns.
It’s the Walmart brand of shredded potatoes and they are so good! The pieces are just thick and firm enough that when you brown them in a bit of oil, they end up really crunchy and remind me of the shoe string potatoes we used to eat from a can.
I wasn’t sure how much we would need for the hash brown/egg cups so I bought two bags and used probably 1/3 or less of one bag. We had hash browns for breakfast yesterday and as soon as I tasted them, I said . . I’m making hash brown casserole with these!
Green bean bundles and hash brown casserole! Hard to beat those two for yummy side dishes.
Chad had been smoke ribs a good chunk of the day.
Delicious meal and we’ll spend the rest of the evening enjoying some good family time.

OMGosh! Those ribs look SO good. We love hash brown casserole but I have never made green bean bundles (yet).

I could eat all that! =) Is that casserole like funeral potatoes? Everyone at church makes those for every potluck and I like them, but I never make them, for some reason.
