Smoking Meat

Chad has a new smoker and I love it. I was telling Vince how much I love it and .. . I got the minimalist speech. I understand and we don’t need another one. First, Chad made summer sausage with some of the venison and it is the best I’ve ever tasted. He said he used a mix (store bought) so I’m ordering some to have sent home and we’re going to try it.

Yesterday he smoked a pork loin

It was delicious! It tasted a lot like Canadian Bacon. He said he has two more in the freezer so I’m hoping he’ll do another one and we can slice it very thinly and put it on a pizza.

Chad is working today so I told him I’d fix Cupcake Chicken. They keep this Pyrex dish they use in the smoker. It’s ugly but it’s clean. Tonight we’ll have leftover baked beans that I made yesterday, cupcake chicken, potatoes and salad.

I’m glad the treats for the Sheriff’s Office are made and dinner is cooking.
