The load that just came out was expected to be the last load before my trip. It was one tray of sliced dill pickles, one tray of sliced bread & butter pickles and two trays of cut corn.
There’s one quart and two pints of corn; one pickle jar of pickles, along with a half pint of pickles. Obviously, not all the jars are shown. The bread & butter pickles weren’t crispy so I stuck them in the freezer and then I thought . . the liquid coming out of those pickles may be a bit acidic to leave any residue in the freeze dryer so I decided to run a load of very small scoops of ice cream through but then I stuck that tray of bread and butter pickles in there so I may have just defeated what I was trying to do. If the ice cream and pickles aren’t done before I go, Vince will have to take care of those for me. He said he doesn’t mind.
You may have noticed that I was able to seal the pickles in the jar the Bread & Butter pickles came in. With the handy dandy vacuum chamber Vince made for me, these kind of jars/lids are re-sealable.
The Verdict on the Pickles:
Right now, I’m saying I won’t do them again. I can’t judge the Bread & Butter pickles til they’re completely done but the dills were salty! I had rinsed both pickles before putting them in there, hoping to get rid of a little of the salt. I was thinking they’d be like dill chips, kinda like the zucchini chips were that I freeze dried. The zucchini chips are amazing . . the dill pickles . . not so amazing.
I’m thinkin they may be really good broken up into small chunks (like . . break each pickle up into 5 or 6 pieces) and put them on potato salad or sandwiches. It would have to be done on individual servings because they would get mushy really quickly if stirred into the whole bowl of potato salad. They will be used but unless my opinion changes, I won’t be making more of them.

That’s good to know. I wondered how that would be. It will be interesting to see about the Bread and Butter ones, and interesting they didn’t dry in the same amount of time.

Why don’t you try dipping them in some ranch dip?? The Runaway Train does fried dill pickles and serves them with Ranch Dip. They are very good and so are the Texas Toothpicks (fried jalapeno slivers).
