This morning I made about 10 small pizza crusts for the freezer and one larger crust for today. Because Vince loves leftover pizza, I’ll probably make one smaller one and the larger one and he can have some for leftovers. I’m not a fan of leftover pizza and, for that reason, I’d rather make a couple of smaller ones instead of one huge one. When we got the outdoor pizza oven, the opening is narrow and we had to chop off the sides of my wooden pizza peel to make it narrower so I either need to get a new, wider peel for when I’m cooking them inside or . . just use the outside oven. Today, it’s raining and cold and even though the pizza oven is on the porch, I don’t want to be out there so the pizzas are being made inside.
Obviously being pretty and uniformly round is not a concern of mine. They all taste the same in the end. There are nine that went into the freezer but three of them were still on the cooling rack. One is being used for our second pizza today.
For the freezer, I did an accordian folding with waxed paper . . put a crust on it, then folded the paper back, put another one on it, then folded the paper back .. and so on. I stuck them in two reclosable vacuum seal bags, vacuumed the air out and stuck them in the freezer. I told Vince where I was putting them . . sewing room freezer, third shelf down. He can make pizzas while I’m gone . . or he can go buy an awful pizza and enjoy it without my complaining.

I will take bets that he has to call you to ask where the crusts are when you are gone!

For pizza … he might make his own if he knows where EVERYTHING is. =)
