The pizza sauce I made yesterday was left in the home freezer overnight so it could freeze with the trays level. The trays have to be at an angle in the freeze dryer because it has to sit with the back about 1/2″ lower than the front for the water to drain out.
Since I only had three trays of pizza sauce, I shredded several pounds of mozzarella cheese. I think I had about 2 pounds and some of it I kept out for the pizza tomorrow but it was more than enough to fill one tray.
The third tray of pizza sauce is all the way in the freeze dryer and you can’t see it but that’s three trays of pizza sauce and one tray of mozzarella cheese.
Once it’s done, I’ll probably put the sauce through the blender and make it into a powder. Even though it’s a bit chunky now, those tomatoes will turn to powder anyway once they’re totally dry. When needed, I’ll add water to the powdered sauce and hopefully, it will turn out as good as the powdered sweet potato pie filling.

What gadget are you using to shred the cheese? That looks faster than a grater!

I’m predicting that it will powder nicely and taste great later! Freeze dried cheese is so neat – I had some cheddar from Thrive, and once you wet it, it acts like regular cheese again in a short time.
