Before leaving to go get a haircut about 11:30 this morning, I stuck the cupcake chicken in the smoker. Sunday I had deboned the thighs and seasoned them, then covered the pan and stuck it in the fridge.
All I had to do today was stick a piece of wood in the smoker, take the foil off the pan, turn the smoker on, stick the pan in there and walk away. After getting my hair cut, I ran by Hobby Lobby and the grocery store. Got home and took the chicken out of the smoker.
The last time I made this, Chad said “where’s my credit?” so tonight I called him, and again thanked him for trying this recipe and then sharing it with me.
We had Pioneer Woman’s Crash Hot Potatoes, and beans. I didn’t take a picture of dinner but I took a picture of the leftovers.
Vince took the leftovers over to the shop fridge for me and he said “This looks like Papa Bear, Mama Bear and Baby Bear jars”. The far right jar has 4 thighs, The middle jar has beans. The left jar has leftover potatoes.
This really has become my favorite way to fix chicken.

Oh, they looked good out of the smoker! The dinner sounds delicious. Anything with potatoes of any kind means I don’t starve, whatever else is served! LOL
