For the past several weeks, I’ve been hungry for Moussaka Potatoes. I even bought a frozen dinner but haven’t baked it yet but I grabbed an eggplant and was going to put it on next week’s menu but couldn’t wait. I usually don’t cook on weekends and we survive on leftovers. It isn’t like we’re having to scrounge . . I plan the meals so we’ll have leftovers for the weekend. But, yesterday, I made moussaka.
Actually, I made a bit more than one recipe and have an extra pan for the freezer.
Every time I make this, Vince just raves about it. Yesterday he said “You could sell this stuff!” Yep . . I could see that happening.
Since it already had potatoes and eggplant, I wasn’t going to fix anything else but it had been a few days since we had roasted brussels sprouts with goat cheese and balsamic so I added that as a side. It was a yummy dinner. We ate less than one pan so, not only do we have a pan in the freezer, but we have enough for another meal and a snack for Vince.

I love Moussaka! I’m going to have to try this. I made the crack chicken last week. I enjoyed it but not my cup of tea but I’m glad I tried it.

I’ve never had moussaka with potatoes, just with eggplant. It looks quite delicious.
