Today I used the little partial jar of freeze dried sweet potato pie filling and made a little pie. The pie tasted absolutely 100% the same as it would have if I had started from scratch today.
I started by measuring the powder.
In the 20 jars I made, I put 7 oz. each but this was just what was leftover and it had 2.33 oz., which is almost exactly 1/3 of what’s in the rest of the jars. Based on my math, I’m wishing I had put 8 oz., or maybe 8.25 oz. of filling in the jars. Normally I can make three little pies out of the filling for a full size pie and have just a little leftover. For this little pie, I would like to have had just a bit more filling. I am not going to go back and change what’s already in the jars, since they’re all vacuum sealed already. I’ll make a full size pie using the contents and if the filling seems skimpy, then the next time, I’ll use 1 jar, plus 1 or 1.25 oz. out of a second jar, stick the second jar in the fridge and then when I start to use it, I can open a third jar and use enough out of it to make what I need and so on. Had I put 8 or 8.25 oz. in the jars, I would have ended up with 18 jars and that’s what I thought I was going to get. The reason I chose 7 oz. was because someone on the freeze drying group had made pumpkin pie filling but didn’t add the milk and she put hers up in 5 oz. packages. I figured with the milk, I’d add 2 oz. but next time, I’ll add a little more filling.
To reconstitute, I added water, measuring it, until I got it to be the consistency that the filling was before I put it in the freeze dryer. The dried filling weighed 2.33 oz. and I ended up using 2.30 oz. of water so it’s 1:1. Add exactly the same amount of water as dried pie filling.
Every time I make a pie, I thank Vince for agreeing to let me get rid of those awful tiles on my countertop.
It baked up perfectly.
If I do say so myself, look at that flaky crust! Some folks like a thin crust. I like mine thick. I’d be happy with my pie filling on top of a biscuit!
The sweet potato filling was definitely a huge success. Yesterday after finishing it, I was thinking I’d never do it again. Today, I think I want enough to have a sweet potato pie every week.
