As I got ready to cook dinner this afternoon, I was realizing I was out of everything! I can’t even remember the last time I went to the grocery store with a list of things I need. I pop in with Vince, walk up and down every aisle but I’m just following him around. When I’m grocery shopping, I like to shop alone . . without any “help”.
Tomorrow we have to go to Tractor Supply so I asked him if he could drop me at the grocery store, then come in and find me when he’s done. Yes, he can do that. I’ll be racing through that store, grabbing what I need so I can be done before he gets back.
The plan for dinner was turkey enchiladas but while doing next week’s menu, I found a recipe for Turkey & Lentil Tacos in the pressure cooker. I have turkey . . the very end of the turkey we fixed last week, and I have lentils and I have tortillas. That recipe is a go.
Borracho beans are also on the menu. I needed bacon for those. Two slices of bacon were all that were in the fridge and I knew I had taken the last package out of the freezer. I had homemade tasso . . that will probably make them even better. That reminds me . . I’m almost out of homemade tasso and I need to make more. Pork butt added to the grocery list.
I needed jalapeno peppers and I’m out of those but I had Hatch peppers in the freezer
That will be a great substitute for jalapeno peppers.
My list is made. I have a lot of groceries to buy but all the meat except the pork butt is coming out of the freezer so at least I won’t be buying much meat.

Isn’t it great to have reserves? Where you live, I’d think you have to have them. It’s only a couple of miles for me to grocery store, but a little farther for you!
