There may be no end to the cranberries. The pile in the fridge doesn’t seem to be getting smaller. Today I canned 24 quarts of juice and 17 pints of cranberry sauce.
Cranberry Juice & Cranberry Salsa
That’s a picture from a previous night of canning. Tonight I was too tired to even take a picture and I still have to put the dog food in jars and vacuum seal it once it’s done .. in about an hour. I’m happy with what I accomplished today . . my knee is screaming at me though. Dang .. it hurts. I Just took aspirins and hope they get to work right away!
So far, I’ve put up 66 quarts of juice, 17 pints of salsa and 17 pints of sauce. I don’t even want to think about how much more I have left to do. We had cranberry juice for breakfast this morning and Vince said “Would you like to get more cranberries?” I didn’t even have to think before I answered . . NO!!

Gees, I just bought 2 bags of cranberries and with everything else I bought I feel overwhelmed with what I need to clean, cook, store. I usually just make cranberry applesauce, but I may need to check out the salsa recipes….
Take care of the knee – do you have one of those squishy, anti fatigue cushions for your feet? I got a couple and they are worth it whenever you need to stand at the sink or ironing board or whatever. And the anti-inflammatory lotion I told you about helps…. Use it generously until the pain lessens and then you can test backing off on the amount that you smear on your knee.

How funny, I bet he doesn’t even know how hard this is on you! You are a great person to do this though. I guess I am way too lazy to can stuff. You have a lot more energy than I do. My leg has bee killing me as well. There are some bones that hurt that I didn’t even know I had! LOL

I really wish I’d been able to get some cranberries at Aldi. Just one time of this would have set me for quite a while!
