Last night I baked a round of brie and made a “sauce” with the cranberry pulp left over from juicing the cranberries.
It was so good and simple! I heated up about 1 cup of the cranberry pulp and stirred in a tablespoon or so of honey and a little white sugar. I sliced up one jalapeno pepper and added it to the cranberries and let all that simmer for about 10 minutes. I toasted some chopped walnuts and chopped some cilantro. Vince doesn’t like cilantro or I would have added it directly to the cranberries but instead, I topped it all with walnuts and cilantro for me – just walnuts for Vince. I’ve used different jams and jellies to make a sauce for brie but using the pulp was really good!
I’m so glad Vince asked “What can we do with the pulp?” because my plan was to give it to the chickens!

When I was at Aldi, they had brie logs which were good. I’m going back tomorrow to get some more as well as cranberries, which I somehow missed last week. The “logs” will make it easier to cut small pieces to wrap in some crescent roll dough and bake for some snacks. I make cranberry-apple sauce which is wonderful for turkey day or on ice cream or yogurt.
I’m even going to get some brussels sprouts to roast and make other dishes. Fun cooking in the future!

That does look delicious, and I bet it would be equally good with Swiss cheese. I also checked my Aldi for cranberries – nary a one!
