This morning when I woke up, the first thing I thought about was . . we’re having gumbo today. Yes, I love gumbo! I got it totally done yesterday so the flavors could do whatever they do overnight . . blend, intensify . . I don’t know. All I know is that I like gumbo better the second day.
How good does that look? It was all done except for the okra. I still have a few jars of okra that I canned year before last when I made a lot of okra in my garden.
I was thinking . . if we can have ice cream before we have our meal, we should be able to have gumbo for breakfast but I didn’t think that would fly with Vince so . . our afternoon meal will be gumbo, if I can wait that long.

I had seafood gumbo at the Welcome Center on I-10 in the east entry point of Louisiana last May. It was good but SPICY! My first time. Great for lunch but not for supper.

YUM! I’ve been thinking about gumbo lately. We’re doing chili tonight, but I need to make a chicken and sausage gumbo soon! I always make a seafood gumbo for Christmas Eve. Over the years it’s evolved into a feast of gumbo, fried oysters (I buy a gallon, so after I use what we need for the gumbo, I fry the rest), and seafood and/or crawfish boudain. Then we have leftovers on Christmas. I don’t cook on Christmas!! I agree that gumbo is always better after the flavors have a chance to meld. Enjoy your gumbo!!
