This is soup weather and it’s a struggle for me not to want soup on the menu for every day. Even with the effort to NOT have soup every day, we’re still having soup three out of the five days. I had planned to grill lamb chops this week but this is going to be an icy cold week and I don’t want to be standing outside grilling. It will be nice to have the heat from the stove in the house!
Monday:
Ground Beef/Orzo Soup (leftovers)
Toasted Cheese Sandwiches
Tuesday:
Red Beans/Sausage/Rice
Cornbread
Coleslaw
Wednesday:
Chicken/Sausage Gumbo
Rice
Crackers
Potato Salad
Thursday:
White Bean, Chicken Chili
Brussels Sprout Chips
Crackers
Friday:
Chuck Roast/Gravy
Rice
Corn
Cucumber Salad
Biscuits
Everything this week will have leftovers except Monday, which is leftovers.
For Saturday and Sunday, we will have gumbo and chuck roast.
There will be enough of the red beans, the gumbo, and the chili so that I can freeze it in one or two person portion sizes. Some will be the next few weeks and some will be saved for Vince when I’m gone. I do love cooking enough to have pre-made meals in the freezer. Some foods freeze better than others but these three are excellent choices for the freezer.

Some things freeze dry/rehydrate better than others. Beans are not my favorite things after they’ve been freeze dried.

Sounds like a great week to me, and I bought my favorite Progresso soups last week so I could have soup all the time, too. =)
