Recipe Report

The main items on our menu this past week that may have been of interest were:

Monday:
Cream of Cauliflower Soup

This was good. I had made it before and I thought Vince had liked it but he wasn’t crazy about it. There are some weird (to us) spices so it wasn’t a familiar taste. I won’t make it again.

Wednesday:
Cupcake Chicken

I’ve already written about this. It was so good!

Roasted Potato Salad with Dijon & Goat Cheese Dressing

Another great one. We’ll have this again for sure.

Friday:
Beef Orzo Soup

This is a really easy recipe. I don’t use the beef bouillon cubes. Instead, I use the beef flavored Better than Bouillon. I often don’t have frozen peas and carrots so I just use fresh sliced carrots. I add more spice – Slap Ya Mama, jalapeno peppers, a little cumin .  . whatever is handy that looks good. It’s a very forgiving recipe. Just add what you want. This is a soup recipe we have often during the cold weather.
