This is a bit of a test to see how it goes but as mentioned last week, I’m going to post my menu for the week, and my knitting goals for the week. There are lots of soups this week but a couple of them are leftovers (Cauliflower and Chili) but this is soup weather, in my opinion. It’s cool. It gets dark early . . I love soup any time but especially in the fall and winter.
I’ve decided to do my knitting goals in a separate post so it will follow.
Monday:
Cream of Cauliflower Soup
Salad with Fried Goat Cheese
Pita Chips
Tuesday:
Chili, Crackers, Salad
Brussels Sprout Chips
Wednesday:
Cupcake Chicken
Baked Beans
Roasted Potato Salad with Dijon & Goat Cheese Dressing
Thursday:
Cabbage/Rice Casserole (from the freezer)
Green Beans
Cucumber Salad
Friday:
Beef Orzo Soup
Coleslaw
Crackers
The cauliflower soup and chili were leftovers. We will have leftover chicken and leftover soup to get us through the weekend.

I was interested in that cupcake chicken when you were at Chad’s and googled around but wasn’t sure. Now I’m wondering what you use for the rub and sauce since this recipe is selling recipes for those two ingredients. Sounds fabulous.

So funny, Judy! When I saw that you had written Cream of Cauliflower Soup, I immediately thought to myself that I need to try the Mediterranean Dish recipe for roasted cauliflower soup, not knowing that was the exact recipe you linked to! Have you tried it already? Is it good?

The term “cupcake” chicken sounded terrible, but the recipe looks good. If only DH liked thighs. I don’t think I have ever seen a recipe where you remove the skin and then replace it!

You always eat well, but Wednesday looks particularly good to me. I may be having chili tomorrow, too, as DH is working the polls and dinnertime is uncertain.

Just wish I was as organized as you! I don’t plan meals until it is time for them!! LOL I do buy things that are easy and put them in the freezer and then I can thaw them and eat. My husband is very picky. He will not eat some things and does not like to try new things. He is one of those meat and potato people! His mother spoiled him too much and yes, I took up where she left off. His first wife didn’t even do anything from what I hear. But there are two sides to every story! LOL

At least you have a plan, and I agree this is soup season! I hate that it gets dark so suddenly now. I like no time changing so it’s all gradual. When we move to Arizona, we’ll be back to that! A LONG time from now. =P
