Several of you have told me that you don’t like goat cheese. That makes me smile and brings back a memory. When we lived in Kentucky there was a group from Vince’s work who had gone to a new restaurant in town and they had an appetizer that had goat cheese in it. I remember taking a bite and thinking . . I have to spit this out! I did not like it one bit. I managed to get it down but I didn’t try any more of that appetizer and I didn’t try goat cheese again for a very long time. I don’t remember when or why I tried it again but oh, my . . I love that stuff now. I love it so much that when I buy it in the grocery store, it’s all I can do not to open it and start nibbling on it before I get out of the store.
Nowadays I probably like goat cheese any way it’s served, or fresh from the package, but one of my favorite ways to eat it is fried. I slice of about 1/4″ slices, form it into a tight ball, then mash it with my hands. I will stick these in the freezer for about half an hour. Then dredge them in a beaten egg, seasoned panko and fry them in butter.
Last night for dinner, I seared the leftover tuna and served it over a salad, along with the fried goat cheese.
It was quick to fi but it was super good and not heavy. We normally eat about 3 and that’s it for the day but yesterday we were busy and it was after 6 when we ate so I was happy for a lighter meal.
