Yesterday my friend and I went to a local restaurant that always has yummy food that’s sometimes a bit different from the normal food served around here. One of the things we got was some kind of brussels sprouts appetizer and it was so good. We both loved it. Even though it was raining when we left, I went straight to the grocery store to buy brussels sprouts and goat cheese.
I’m going to experiment a bit today. My guess was that she had steamed the brussels sprouts, then pretty much separated the individual “leaves”, tossed them with oil and roasted them – maybe in an air fryer or a convection roaster, then tossed them with a balsamic reduction and sprinkled crumbled goat cheese over the top. This was one of the best things I’ve had in a while!
I began looking for recipes and found this one for Brussels Sprouts with Balsamic, Cranberries, Goat Cheese and Walnuts. It looks amazing but there’s a little more to it than what we had yesterday. Vince might like this one better and I have everything to make it.
This recipe looks a bit more like what we had but our brussels sprouts were pretty much just a bowl of leaves – no whole or big pieces of brussels sprouts. I was thinking of adding toasted pine nuts but this one has toasted almonds.
I’m making one of these recipes today because I can’t stop wanting more of those brussels sprouts we had yesterday.

That sounds really good. I like to buy fresh Brussels Sprouts and cut them lengthwise and saute them cut side down in butter. Obviously they’re not individual leaves that way…now I’ll be searching for recipes that use the individual leaves…
