It’s raining in Texas! It hasn’t stopped since last night and it looks like it going to continue for a while. I had planned to go outside and work on my mushroom garden but, due to the rain, that will just have to wait. I’m not complaining. We always need rain in this part of Texas.
I was messing around on the computer this morning when I found some of Judy’s Facebook posts. I decided to add my two cents to a few and then I got the “phone call”! The very recognizable voice said, “Dear, don’t you have anything better to do?” Just so you know, I added the dear to the question. I do that quite often in my head. It works! So there is a free piece of advice you can share – just pretend your better half said what you want them to say!
What can I do today, I thought, . . that would be fun, fulfilling and meaningful? I will make me a nice rainy day lunch, bingo! Now I know that many of you wonder what I eat when Judy is away. You don’t have to worry, she left me lots of stuff in the fridge and a years worth of freeze dried food. She even left freeze dried food for Rita.
My selection for lunch included a freshly cooked grilled cheese sandwich, homemade tomato soup and a glass of apple cider. For the sandwich, I used a combination of sharp cheddar and some nicely aged Swiss. This was placed between two slices of French Brioche bread and cooked to perfection on a bit of sizzling butter. The soup consisted of some of Judy’s freeze dried homemade tomato soup which was reconstituted with some wonderful whole milk. And finally, the cider added just the right amount of cool acidity to bring out the wonder combination of flavors. I have captured all of this in the photo you are seeing.
Oh you ask, what’s the screwdriver doing in the picture? Well that’s there so you know the picture is from me. Judy would never do anything like that.

I love grilled cheese and tomato soup. Next time try a slice of fresh tomato in the sandwich! You need cheese on top and bottom so it doesn’t slide out, but I love that. Or bacon! Enjoy the quiet time until she’s back… 🙂

YES!! Absolutely delicious and the tomato encased in the melted cheese is a must! My cheese of choice is provolone; cheddar or American is for burgers, lol. Also a very thin amount of mustard on one slice of bread kicks it up a notch! Hmmm… wonder if there’s any provolone in the fridge? LOL Vince, you did a great job fixing lunch for yourself and not just grabbing a bowl of cold cereal! Judy worked hard to be sure you’d have choices. 😀

That looks really good and is almost exactly what I fixed for lunch today. You are doing well. Maybe if it is raining, you need to run the sweeper over the floor or vacuum or dust. That would help the time go by inside. Just a suggestion. 😉
