A fellow blogger, whose blog I love, posted this recipe today. I’m still on a diet but weekends, I’m a little . . off the diet. I don’t eat ice cream or cookies but I will let myself have something I’ve been wanting. That’s how I get through the week — like dealing with a spoiled child. If you behave in the grocery store, I’ll give you a treat when you get home! But, for me, it’s . . if you don’t eat the potatoes on Wednesday, you can have some on Saturday! My diet plan will probably never be the one you’re reading about in health food magazines but it’s working for me.
Potatoes are one of the things I really crave. We were grilling lamb chops tonight and I knew I was fixing potatoes. A baked potato wasn’t thrilling me. I didn’t want potato salad but when I saw my blogger friend’s Twice Baked Potato Heaven recipe, I knew what I was fixing and I had everything here to make it. I used homemade yogurt in place of sour cream and have green onions growing in a bed in the front yard. Otherwise, everything else came from the grocery store and was in the fridge.
Dinner tonight: Grilled lamb chops (that I actually cut away from the bone before grilling), salad and Twice Baked Potato Heaven.
Every time I hear someone say they don’t like to cook or would rather go out to eat, I’m so thankful that I love to cook and that I’d rather do most anything than go out to eat. I may not be the best cook but to me, there’s no place better to eat than at our house. When the air conditioner guy was here a few weeks ago, I asked him where he liked to eat in Brady and he said “at my house”. I wanted to hug his neck. I know we’re all different and I’m not saying my way is the best way for everyone but to me, there’s nothing that say “I love my family and I love my life” than sitting down to a home cooked meal that I enjoyed cooking, putting the phone away, turning off the TV and enjoying family time over a good meal.
Today our meal had to be planned between football games but we did it!

I saw that recipe as well and thought ‘MAN, that really sounds good’!! I might hafta try it out as our next family gathering. If you haven’t tried her penne pasta dish, it’s to die for. That’s one thing I DO cook when I start craving it (but then it’s my next meal 4 or 5 times in a row before it’s gone).

I remember one of those “get to know your classmates” activities in college where you talk to a bunch of different classmates and ask them questions about themselves. One of the questions was my favorite place to eat. I told them “Rhonda’s house” and no one knew that place. 🙂 When they asked me where it was located, I told them it was my house. I, too, love cooking and eating at home and most of the people I know can’t understand why I don’t like to go out to eat. I just love the process of find a recipe, getting the supplies, preparing it, and then eating it.
When I get a craving for potatoes, I bake a russet; cut it in half and smash the potatoes in the skin; mash some butter into the potatoes; sprinkle shredded cheese and bacon pieces on top and then bake for 10 minutes until the cheese is melted and the bacon pieces are crispy (I use the bacon pieces purchased at the store). Yummy goodness.

Today was potato day here, too. I just baked it and used the whipped butter – oh, so yummy. This recipe looks good, so thanks for the link. A new way to fix potatoes never goes amiss.

We just got back from Roselle, IL. (we had another grandson pass 20 yrs old). I could not wait to get back to my cooking. There are times James will say would you like to go out to eat and my answer is usually no I will cook. We eat a lot of vegetables (so why am I fluffy?) and eating out is just not the same. Also, I hate to pay for a meal that is just not good. Thanks for this new recipe that I will be trying soon.
