Bean sprouts will be my next experiment in the freeze dryer.
The sprouts probably will not reconstitute and be crunchy . . but they may. My plan is to leave them crunchy and use them on sandwiches and salads. The nutrition will still be there. The dried bean sprouts will give a nutty flavor to the salads or sandwiches.
In fact, this morning I added a few crunchy, fresh sprouts to my omelette.
Until the next batch has sprouted, I will spread these sprouts on a freeze dryer tray and freeze them. The others should be ready by Saturday. Those will be spread on trays and into the freeze dryer they will go.
A reader sent a link to a recipe for Sprouted Mung Bean and Peach Salad. I bought fresh peaches at the store but they are just awful. I used one in a smoothie and tossed the other two. I have some of my home canned peaches so I’ll use those instead of fresh peaches but I am going to try this recipe.
Just when I think I’m out of thins to freeze dry, I get a new idea! Bean sprouts were not something I ever thought about freeze drying but I think they will be wonderful!
