The kitchen is definitely starting to look like a lab of some sort. There’s yogurt in the Instant Pot. Vince is culturing buttermilk, the pickles are sitting there waiting to start fermenting and now . . kimchi is in the fermenting box.
I used habanero peppers in the kimchi. That may have been a huge mistake. I figured one or two shouldn’t be too much but just tasting it now . . it’s pretty spicy and will probably get worse. Guess I can always ferment another batch with no peppers and combine them. We’ll see how hot it is after it’s fermented.

Kim chi is pretty hot on its own! Good luck with that peppers included batch!

After the first bite your tongue goes numb so eating more is easy! LOL. How many pints does your fermenting box hold? Toby won’t eat any of my science experiments so the 2 qts I make each time is perfect for me.

I went to South Korea many years ago for a week to visit my then Air Force husband. As I’m sure you know Lunch I is very very popular over there. I remember the very strong smell was always in the air, “has-been” said that the people smelled like it because the smell came from their Morse when they sweat. Not sure if that was true but that smell has stuck with me forever lol
