The cantaloupe is done and is it ever good! I was afraid it wasn’t going to be awesome because the cantaloupe weren’t great. If they had been on a buffet, I would not have gone back for a second slice but since we had them, I went ahead and cut them up and freeze dried them.
This is easily as sweet as candy. I had to try one or two pieces, then slap my hand and walk away. I could easily have eaten an entire jar. When we buy cantaloupe, it’s rare (1) that it’s REALLY good and (2) that we eat the entire thing before it goes bad. None of this will go to waste.
I can see putting a few pieces of this in a blender for my morning smoothie. When I walk through the store this winter and cantaloupes are $3.99 each and they look horribly green, I’ll just smile and keep walking. I think Vince got these on sale for 49¢ each and there were six of them.
It took 56 hours and 7 minutes . . start to finish.

You need to look for Pecos canteloupe in the stores next summer–July/August. They are grown around Pecos, Texas and are absolutely the sweetest cantaloupe you will ever eat. Only available for a short time. I’d think your United would have them as I think their corporate office is in Lubbock? If you don’t see them, request your store to get some in mid to late summer. No other cantaloupe tastes like a Pecos. Our Kroger will have them a short time and I’ve found them at farmer’s markets as well.

I think you really did good by buying this. You have preserved food from this summer that will last you all winter without the threat of going bad or spoiling in a regular freezer. Smart move for you.
