Vince does not like cilantro!
When he walked into the kitchen and saw this pile of it, I could see panic in his eyes. He was afraid I was going to use it in dinner!
You can see my handy little jalapeno seeder next to the pile of cilantro. I love that thing!
Chopped tomatoes, onions, jalapeno peppers, cilantro and a bit of lime juice. If this all works out like I’m hoping, I’ll be able to put the dried pico in jars, leaving room to add water. Then when I want “fresh” pico, I’ll pour a little water in, shake it up, add some salt and hopefully it will taste just like fresh made!
Three trays of pico. I figured I’d fill the fourth tray with eggs and wondered if they would taste like cilantro so then I said . . why not just add cilantro to the eggs . . so I did.
I still have the corn and cantaloupe to put through the freeze dryer.

I discovered that a melon baller (a very rarely used kitchen gadget at my house) makes a great pepper seeder. Your pico looks great!
