My lazy girl/clean out the freezer soup turned out delicious. The plan was to add barley but before I had time to add it, Vince said “Let’s eat!” so we ate and then I added barley to the leftovers.
During winter, and I know we have a long time before winter is here but a girl can dream, I love soup. I think I could eat a toasted cheese sandwich and about any kind of soup every day. Even in summer, I could eat a cold salad and soup every day.
Some day I’m going to get organized enough to have a whole shelf in my freezer that’s dedicated to soups. I could freeze in sizes just enough for the two of us to have a meal. That would be pretty easy to do . . the only hard part is having a clean shelf in our freezer!
Speaking of shelves in the freezer, my little “pizza table” things arrived yesterday so I can’t wait to get a shelf in the freezer just for the freeze dryer trays. Right now I can put one tray in the freezer on top of the fridge in the shop; I can put one tray in the freezer at the top of the fridge in the sewing room and two in the big freezer in the sewing room. Some day . . maybe next week, I’ll get a whole shelf cleaned out just for those trays.
The freezer in the sewing room needs to be defrosted. That’s going to be a huge job but I might as well just do it.

Once you get enough veggies freeze-dried, you can always make up jars of soup, ready to heat water and simmer. I’ve done that with jars of freeze-dried onions, carrots, celery, carrots, peas, mushrooms, rice, meat (chicken or beef), bouillon (chicken or beef), and the I add whatever fresh items I need to finish up.
I also make up omelet jars, usually mushrooms, onions, cheese, peppers and whatever are stashed in a jar and all I have to do is add water to rehydrate, add eggs, shake and put in pan to cook.

I do not like to defrost anything! Take your hair dryer out there to make it faster. LOL
