This may not be your typical Christmas ham story.
Fact #1: I do not like country ham. I don’t mind it in the packages but I don’t like these big ones.
Fact #2: I do not like how it smells.
Fact #3: I do not like how it tastes. For some reason, it tastes different from the small packages of country ham. Of course, there’s no telling how one that’s been sitting in the fridge for 3 years might taste. I don’t intend to find out.
Fact #4: I do not like how it looks!
Fact #5: I hope coyotes like country ham!
Here’s a blog post about two country hams Vince got on sale in 2015. Yes. I said 2015! In this blog post I wrote about two country hams. This is neither of them. I knew he bought three but I guess the third one was purchased the next day. I have no idea.
The first one . . I took care of it. You have to wash them and rinse them and rinse them again and again and then boil them. I can’t remember. The dang thing is heavy and I did it all outside because when I put it in the water and take it out, I usually make a mess. After that one, I told Vince . . YOU like country ham. YOU take care of it. He took care of one.
All of 2016, all of 2017, and pretty much 3/4 of 2018 I’ve been saying . . PLEASE do something with that country ham that’s in the fridge. He’s going to do it! For the past few months, I’ve threatened:
- If by the time we go to Louisiana (February), that ham is still in the fridge, I’m throwing it out for the coyotes
- If by the time you go back to work after being off for heart issues (mid-May), that ham is still in the fridge, I’m throwing it out for the coyotes!
- If by the time I get back from MO, that ham is still in the fridge, I’m throwing it out for the coyotes!
It’s still there. I think I heard the coyotes last night saying “Can we have that country ham?”
Vince swears they last forever. I guess sometime in the next 10 years, maybe he’ll find out!

I think you may well be the winner of “oldest ham in freezer” contest! That thing would have been gone a long time ago at my house…and to think of the yarn you could have purchased with that money!

Have you tried Virginia Ham ? that is not too bad, but I am with you on Country Hams … YUCK !!!

I think it is time for the coyotes to have a good ham. Maybe they will leave everything else alone!

Eww, I wouldn’t wanna try it! And I’d put it far, far away so coyotes aren’t tempted to come closer looking for more! Yikes!

The coyotes may die. That is ok. We have found over many years and trials, cooking a ham that has been frozen is so salty and doesn’t even taste like ham. They are inedible for us. Due to my heart attack, no sodium is the way to go. Ham no longer works for us, no bacon, ham steaks etc. I want to do Keto to lose weight, I am busy researching. I am also diabetic.

It hasn’t been frozen. Even when I cook the country ham, I soak it in water several times before cooking. I make most of our bacon and it does take salt to cure it but I rinse it over and over before smoking it.

2015……I sure would not want to eat it. I would think that long in the freeze it would be freezer burned and it would taste funny.

So it’s been hanging somewhere? Cured? I’d want to ask a butcher how long it would be good for, even before I threw it to the coyotes.

I didn’t know what a country ham was so I googled it. Found an interesting article. https://uknowledge.uky.edu/cgi/viewcontent.cgi?article=1145&context=anr_reports
It says that they are shelf stable and don’t need refrigeration. It talks about the summer sweat and that they are ready to cook after 9-12 months. Doesn’t give a definitive answer for how long they will last! Good luck with it.
