I’ve had sirloin steak out to cook for three days. It’s a big pack with four pretty good size steaks. Every day Vince comes up with an idea to go somewhere and eat. I forgot what happened Wednesday but yesterday, the a/c guy was here and they were talking about Mexican restaurants. When the guy left, Vince said “Let’s go get Mexican!” I said “I have steak out to grill. It’s what I had planned to cook yesterday!” He said “That’s ok . . we’ll have it tomorrow.
This morning I took it all out and seasoned it, but it in a plastic bag and put it back in the fridge.
We don’t fire up the grill here when there’s an extreme fire danger so I’ve been wanting a grilled steak. Now that it’s rained, it’s safe to grill out but by the time Vince decides to eat at home again, we’ll probably be back under extreme fire danger!
He went to take the trash to the landfill and came back and said “Let’s go eat catfish!” I said “I have steak from yesterday to grill!” Nope . . he wanted catfish.
We got back and I was getting something out of the freezer and came across several bags of veggies that he bought to cook while I was gone. Didn’t happen! One was peas, carrots and green beans. One was broccoli and I don’t know what else but I saw water chestnuts. Not exactly soup veggies but they have to get used.
I’m not a fan of the slow cooker but the Instant Pot stays out so I stuck the first bag of veggies in there (the corn, peas and beans) along with the browned cut up steak, a bit of broth, two quarts of home canned tomatoes, onions, celery, seasonings and turned it on.
There was a jar of baby corn in the pantry. I don’t even really like that stuff but I cut those little ears in half and dumped them in there too.
I just added the broccoli bag. I know what it had (because I see it in the picture!) – sugar snap peas, more carrots . . that’s all I see. There might be more. I don’t care . . it’s a bag out of my freezer. There was a bundle of kale about to look bad enough that the chickens get it but I revived it and put it in there too.
I think the pot is about full. I’d like to add some barley and a jar of okra but that may overflow the pot. Definitely don’t want to do that.
I’m betting I have enough leftovers for several meals. I’ll freeze the extra soup (in the real freezer) and that will be a good start towards meals on cold, winter cool, chilly nights.
So . . 4 sirloin steaks, 2 bags of frozen veggies, a bundle of sad looking kale, a can of baby corn . . all stuff that needed to be used . . has been used! I’m happy.

That looks so good! I am so hungry for soup but it’s still just too darn hot. When you take it out to eat, add the barley. Cuz barely make soup so much better.

I have two Instant Pots and sometimes they are both going! Amazing little piece of equipment…just bought an 8-qt for a wedding gift! I will admit to being intimidated at first, but I’m getting better with it. Just bought what I need to make my first yoghurt in it.

It sounds like a great soup, but sirloin stew! LOL That just seems wrong somehow. I’ve never known a man to prefer Mexican or catfish to steak. Now tomorrow, he’ll want steak. And he can have it … in soup! LOL
