When I came home from knitting, the storms were over (I hope) so I went ahead and plugged the freeze dryer back in and loaded it up with the bananas, cheesecake and one tray of zucchini. It should be done Thursday night or Friday morning. We still have zucchini, corn and cantaloupe to get freeze dried and that stuff is not going to sit around waiting for days and days.
This afternoon, I shucked the corn (Vince helped!), cut it off the cob and put it on the trays and stuck those in the big freezer.
In the morning, I’ll put the corn in zipper bags and leave it in the freezer til the freeze dryer is done. Then I’ll slice the remaining zucchini and freeze it on trays. Once it’s frozen, I’ll put it in zipper bags and keep it in the freezer. Then, I’ll peel, and chop the cantaloupe. I’ve read that small pieces are better than big chunks for freeze drying. I’ll freeze it on the trays and then when the current load of bananas is done, I’ll take those out and stick the cantaloupe in, then when that’s done, do the corn and then the zucchini.
That works . . and is probably the best way to do it anyway since it takes 2 or 3 days to run the whole freeze drying cycle. I’m afraid to check the grocery store sale ads . . I don’t need anything else to freeze dry over the next week. At this rate, I’m going to need a second freeze dryer. That’s what everyone says happens . . you get one and then you want another none . . but, we’ll make do with one.

I am lucky to have a friend that has a freeze dryer. She also freezes cantaloupe. She cuts it in half, peels it, then slices it into thin slices which she cuts in half to freeze.
