Change of Freeze Drying Plans

This morning we went shopping. Who’s surprised? Home Depot. Harbor Freight. Aldi. United.

Aldi had bananas on sale and I love freeze dried bananas. They’re not on my diet but I love them and I’m not always going to be on a diet, I hope!

Aldi also had zucchini on sale.

United had corn on sale so we bought 25 ears of corn.

My plan was to fill the freeze dryer this evening with the bananas, cheesecake and plain zucchini and then it should be done either Tuesday evening or Wednesday morning.

I was going to take the extra set of trays, slice the zucchini and store it in the freezer til the banana load is finished, then put the zucchini in the freeze dryer. I’m going to put Ranch Dressing mix on some of the zucchini and cajun spice on some and we’ll eat those like chips.

Once the banana load is done, I can shuck the corn, cut it off the cob and freeze the corn til the zucchini is done.

Mother Nature interrupted my plans but I’m not complaining. RAIN!! We have a chance of thunderstorms through Tuesday and I don’t want to run the freeze dryer during heavy duty thunderstorms so here’s the new plan:

(1) One set of four trays has bananas, cheesecake and zucchini and those are in the freezer waiting til the weather gets better and I can put them in the freeze dryer probably for the better part of three days.

(2) I’ll take the other set of four trays, shuck and cut the corn and spread it out on those trays. Flash freeze it in our freezer (or maybe the freeze dryer if we have a 4 or 5 hour window with no lightning. Then I’ll dump the corn in ziplock bags, put it back in the freezer.

(3) Then I’ll take the corn trays, fill them with sliced zucchini, put it in the freezer and then stick it in the freeze dryer once the banana load is done.

It’s not much of a change but it’s good to be flexible and come up with a solution.

I need to plan better but living here where it rarely rains, storms aren’t usually a consideration.
