This post is more for me than probably for any of you. Whatever numbers I come up with this time is what I’m going to go with from now on when freeze drying eggs unless I have to buy eggs that are smaller or larger than the ones my hens are laying.
In the current load, I have two trays of raspberries (remember they were on sale at Aldi before I left so I froze them individually on the freeze dryer trays and then put them in the freezer til I got home. So, that left two trays for eggs.
Twelve eggs in this bowl weigh 563 grams.
I whipped them up and poured them into Tray #4. They didn’t quite fill the tray so I added three more eggs.
This means 563 + 146 grams, or 709 grams, of eggs are in Tray #4. That means on average each egg weighed about 47.27 grams.
In Tray #3, the 15 eggs weighed a total of 737 grams, or 49.13 grams per egg. I’m going to average it out and say each egg weighs 48 grams.
Once they’re freeze drying cycle is complete, I will weigh the contents of each tray so I will know how much one freeze dried egg weighs. That will make it much easier to package 6 eggs per package for Chad when they’re camping and also, to measure out eggs for our breakfast each morning.
Of course, I will report those numbers here.

Oh, that’s interesting. 48 grams = 48 raisins, approximately, and about 1.7 ounces. Thanks for that information. I’ll be interested in seeing how much water is in the eggs! I’m beginning to think that unless you can FD your own eggs, it’s pretty costly.

You obviously like math more than I do! How is the diet going? I have been faithfully doing the KETO diet to the best of my ability, including drinking the Ketones I bought (fell for it) each morning for breakfast and have only lost 10 lbs in two months. I don’t know if it is because of my chronic pain or the pain meds or just no metabolism but it is discouraging. I am not giving up though! I think I may not be eating enough fat…probably Atkins is a better diet for me. Oh, and I’m drinking my Apple Cider Vinegar each night and have added a tablespoon of coconut oil, too.
