Tacos! Well . . one taco!
The box said the three taco shells is 21 carbs so, one taco shell is 7 carbs. With the tomatoes and taco seasoning, it was an 8 carb meal. I’m still pretty shocked at how little I want to eat and how hard I have to work to get in 1,100 calories each day.
Chad called yesterday and said he bought crabs and was bringing them home to cook for when I get there Monday. He said the guy assured him if he kept them on ice, they’d still be good Monday. The first thing I did was check carbs — ZERO carbs! I’ll dip it in butter so I’ll have fat and protein. So . . am I more excited to see Addie or to get boiled crabs?? I’m excited to see them all. It’s only been a little over two months since we were there so this is one of the quickest trips I’ve made back and I’ll be going back in October. I think Vince is thinking if I go more often, I won’t be so determined to move there. Really, it’s a lot easier for him to take care of the critters and garden and fruit trees when I’m gone now that he isn’t working. Maybe he’s looking forward to some time alone!

I don’t know about you, but I’m having a hard time eating enough good fat on the KETO diet. I did Atkins a couple times and it is so hard to not eat too much protein and not enough fat! When you start looking for high fat things in the grocery store (such as yoghurt), you realize our society is based on low fat everything! Grrr…I think I’m going to have to start making my own yoghurt in the Instant Pot (which I love). Have a great trip!
