It felt good to be in the kitchen again. I have really been in the bed for about two full days. It wasn’t like I was bedridden and physically unable to do anything but I didn’t feel like doing anything so why not sleep? Yesterday I got up about 1 p.m. and heated up a broccoli/chicken/rice casserole I had taken out of the freezer a few days ago, cooked a pot of lima beans, ate and went back to bed. Then I woke up at 2 a.m. this morning and was hungry so I had peanut butter and crackers and a Dr. Pepper, went back to bed and slept til about 9 this morning. I feel like I’ve abandoned Vince. I wander around – the chickens have been taken care of, the dog is fed and drops in her eyes . . he even loaded dishes in the dishwasher once. He must think I’m never getting out bed because that was a big step for him. His cold lasted about 11 days but he only felt horrible the first 4 or 5 days so I’m hoping I’ll continue to feel better.
Vince cannot understand how I can go to bed and sleep two or three days straight but that’s what I’ve always done when I feel bad. I’m pretty lucky in that respect. Even while I was in the ER waiting for a room, after Vince left, I was snoozing. The nurses told me they rarely have anyone who can sleep in there. I truly can sleep anywhere.
Through leftovers and frozen food, I’ve managed to keep us fed without having to cook but I was happy to be working in the kitchen again this morning. I made the pizza casserole from the link I shared earlier. Since I’m not a fan of red sauce, we’ll see how this one turns out. I want to freeze dry the leftovers.
I’m such a bad cook! I am out of mozzarella cheese and there’s no way I’m going to the store so I used Monterrey Jack cheese but then I ran out of that and had to use pepper jack. The small tray in the back is one I’m going to take to Chad’s. I’ll cut it all into squares and put Chad’s on separate trays so it doesn’t get mixed in with the pepper jack batch. Addie and Nicole would have a fit if they bit into something spicy.
Vince said it was very good . . definitely something he’d want me to fix again.
Now, we’re out of milk, Monterrey Jack cheese, pepper jack cheese and mozzarella cheese. I’m afraid someone is going to have to go to the grocery store soon.

This is excellent training for Vince.. He gets a first hand look at how much work you actually do and you cook too! I say give him the shopping list and send him to town.. You deserve the rest. !

For myself I’d have started with the Pepper Jack cheese. Of course, my husband wouldn’t have touched it. Vince likes to shop, send him to the store for the things you’re out of and he can surprise you with the things he thought looked good.

If I tried this, I’d have to use pizza sauce instead of spaghetti sauce. The pepperoni isn’t enough to make it seem like pizza to me. It strikes me as more of a spaghetti meat sauce casserole…. Sometimes we add chopped pepperoni to our spaghetti sauce, so my husband would probably think I lost my mind if I served this as written. He’s be asking where the spaghetti was to go with it. I like the concept, though…. I may have to play with it and see what I can come up with.

Sounds like a good time for Vince to get out of the house and go to town and get this for you. He probably would do it gladly to get out!
