I’m probably the weirdest sick person ever. Please don’t comment on that statement! 🙂 I feel horrible. I go to bed and sleep for a couple of hours, I get up and do all kinds of stuff, then feel horrible, then go back to bed for a couple of hours, get up and do all kinds of stuff. Poor Vince. When he’s sick, he sits and feels bad for days. After we ate, I felt bad, went back to bed, just got up, made bread, went out and watered some plants, got in an ant bed, came in screaming about being covered in ants, jumped in the shower and now . . I’m not sure how I feel . . like knitting or going back to bed.
Anyway, during one of my “I feel great” episodes, I made this Chicken, Avocado & Lime Soup today.
I added kale because we had it and needed to use it and who can’t use a bit more kale in their diet?
Of all the things I’ve canned through the years, I think chicken may be one of the more useful items. It’s so good. Open the jar, pour off the broth and save it if you don’t need it for the current recipe, shred the meat.
No raw chicken to deal with . . easy, good, cooked chicken meat. I would never have felt like making this soup today had I not already had the chicken done.
People are writing on the freeze drying group about slicing chicken breasts really thin, browning them with a few spices, maybe onions and garlic if you’d like, and then freeze drying that so you have chicken ready to use any time you need it. My freeze dryer is sitting empty . . nothing to freeze dry. I had planned to make the chili this week and never got around to doing that. I did do a second batch of lasagna that came out yesterday afternoon so it isn’t like the FD has been sitting empty all week.

I am intrigued by freeze drying after reading your blog. I’ve searched but can’t find any books on it. I know you always do research Judy and wonder if you could suggest anything I could read about it. I need to know more before making a decision. Thanks.

Judy, your colds sound like the ones my husband and I had – on a week long family reunion, a month ago. That cold is still hanging around the back of my sinuses. The soup looks delicious! Doesn’t it feel awful to have ants crawling on you?? When we lived in Ft. Worth we had fire ants, they sting so bad.

The FD chicken sounds delightful, but I love my jars of canned chicken, too. It’s just so darned easy!
