There are literally hundreds of recipes for Crack Chicken on the internet. Some are made in the slow cooker, some are made in the Instant Pot. Most include bacon but I do not. I will sometimes fry up some bacon and put crumbled crispy bacon on top of crack chicken baked potatoes or put slices of bacon on crack chicken sandwiches. For the most part, I do not add the cheddar to the pot because I like adding a slice of cheese on a sandwich, or grated cheese to my baked potato.
Also, I’m not being an Instant Pot purist because I sometimes use a Dutch Oven for the recipe and I find it to be more to our liking.
I always double the recipe but I’m giving the recipe for the single version. Here are some ways we like to serve it:
- Over pasta
- Over white rice
- On buns as a sandwich
- As a hot dip
- Over a baked potato with butter, sour cream and added cheese if desired
Here’s the recipe the way we like it but it’s just as good with the popular directions for the Instant Pot.
Dutch Oven Crack Chicken
While this can be made in the Instant Pot, I’m not a huge fan of boiled, shredded chicken so I like this recipe better.
- 3 or 4 chicken breasts, boneless and skinless
- 1 8 oz. cream cheese (cut into about 20 chunks)
- 1 onion (chopped)
- 2 jalapeno peppers (seeded and chopped)
- 1 package Ranch Dressing mix
- 1 cup cheddar cheese (shredded)
- 1/4 cup oil
- 1/2 cup water

Slice the chicken breasts paper thin. I usually pound the breasts thin, then cut them in half lengthwise and cut into thin strips.
Season the chicken. I use a bit of cajun spice. Use whatever you like.
For the oil, I usually use olive oil. Heat the oil and stir in a bit of the chicken. Brown it in small amounts. The chicken, if sliced thinly, should be totally cooked when you’re finished with this step.
Once all the chicken is browned and removed from the pot, stir in the onions and peppers. Cook tl totally tender.
Add the chicken back in. Stir in the water.
Add the cream cheese and Ranch Dressing mix. Simmer slowly while stirring constantly.
Once the cream cheese has melted, stir in the cheddar, turn off the heat, place lid on the pot and let it sit for a few minutes, stirring it several times to be sure the cheese has all melted.
