Yesterday for lunch I made a big salad. When Vince looked at his bowl, he said “That is a hell of a salad!” We ate about 1:00 p.m. and I never ate anything else the rest of the day.
See those freeze dried onions on there? Yum!
This morning Vince said “I wouldn’t mind having another one of those salads today!” I can do that. Then he said . . “Or, we could run to town and get something while we’re out.” No! It’s too hot to go anywhere! Really . . just stay home and knit. We’ll see how that goes.
A cold salad on a hot day is pretty tasty. I used lettuce, avocado, tomatoes, carrots, broccoli, the onions, mushrooms, boiled eggs, and hemp hearts. I think that’s all but there could be something else on there that I’ve forgotten about.

With this heat, we are eating salads and “picnic” foods. Anything to keep from turning on a burner or the oven. And we will have the electrical lines on our street replaced one day this week. That’s the day we will go to a matinee and out to eat. I won’t be staying here without AC.

Sounds good to me! We had a fruit plate yesterday. at 9:30 it was still 100 degrees under our carport!!

It does look good, especially the avocado and the onions! Avocados here at Aldi this week were 38 cents! It made me wish you could just toss them in the freezer! I got some green ones, but you still can’t get very many.
