Friends often post recipe links on Facebook. Sometimes they look really good and I save them. This recipe for Brown Butter Pork Chops with Mushrooms caught my attention and I saved it.
Early this afternoon, Vince said “What’s for dinner?” and I didn’t have a clue. I went to the freezer and since we’re trying to empty the freezers, I’m just grabbing something and figuring out what to do with it. I saw a package of pork chops and knew what I was fixing.
Pork chops, gravy, rice, squash and sauerkraut. The squash is rehydrated freeze dried squash. Freeze drying squash is definitely the way to go with saving squash. It worked perfectly. I poured hot water over it, let it sit for about 3 minutes .. it could have sat longer but I was ready to put it in the pot, drained it and cooked it just like I would have cooked fresh squash.
For the pork, I added a sliced onion and a couple of sliced jalapenos. Other than that, I followed the recipe almost exactly. It was a package of six pork chops so we have enough for another meal. Yay!

Minus the mushrooms, I think I could really enjoy that! You can have my share of mushrooms forever. =)
