After sampling . . well, more accurately . . after eating about 4 pints of the freeze dried onions, we wanted more. Vince bought 16 pounds of sweet onions at Aldi last week so today I cooked about half of them and loaded up the freeze dryer with onions.
I’m still guessing as to how long it will take. I put in 13 hours for freezing and 13 hours, 15 minutes for drying. That’s probably too much but, better safe than sorry.
I’m guessing it will be at least 40 hours before they’re done.
Aldi had mushrooms on sale this week. They only had 5 packs left when I went by there this morning so I got those. I’ll probably need at least 8 packs to fill the freeze dryer so I’ll try to get more next week. Those are what I’m going to FD next. I’ve had mushrooms around that I freeze dried several years ago. It’s so nice having those and having freeze dried will be even better than dehydrated.
My freeze dryer has definitely been busy the first month we’ve had it.

Does it hurt the quality if an item is over freeze dried?

One good thing about all this freeze drying is that no one can say it hasn’t already shown it’s worth the money you paid!
