I already wrote about making tomato soup for the freeze dryer. Here’s the rest of that story.
Yesterday I had been in the sewing room. I kept telling myself . . You really should stop and go fix something for dinner. At one point, I took a package of chicken breasts out of the freezer . . nothing in mind as to what I was going to make. This is what happens when there’s no meal on the weekly meal plan for Friday and there are no leftovers. At about 4:20 p.m., I stopped sewing and went back to the house. Vince said “Do you want to go get something for dinner?” That’s his way of saying “Are you cooking or not?” We don’t like going to town on a Friday evening so I said no . . I’m going to fix something. Ahh . . brisket tacos and tomato soup. Pioneer Woman’s recipe is so easy and so good and so quick. We had frozen leftover brisket and street size tortillas so . . dinner was ready in less than an hour. It was actually ready in less time than if we had gotten dressed and gone to town to eat.
This time I didn’t forget the crunchy sweet onions from the freeze dryer.
Another pint of onions gone. I can’t stop eating those things.
The best part of all this is that the freeze dryer is loaded up with tomato soup and there will probably be at least three or four meals once that’s done and, since I made a double recipe, there’s another half gallon in the fridge.
I think tomorrow we’ll have toasted cheese sandwiches (with salt rising bread) and tomato soup. Yum!

Sounds like you’ll need to make another batch or 10 of onions :-).

I went to Pioneer Woman to look up the tomato soup. The search button showed 67 recipes! The first one is Tomato Soup with Parmesan Croutons. Is that the one you like? Has chopped carrots and onions. Sounds scrumptious! as well as easy. and those parmesan croutons look pretty good as well.

If I remember correctly, Judy uses the Sherried Tomato soup recipe. I’ll be checking back to see if she confirms that.

It’s the Sherried Tomato Soup that we like but the Parmesan Croutons do look tasty. I’ve looked at that recipe too.
