This has been a typical, crazy Monday! I will get my menu plan up next!
Vince and I were laughing before he left to go to cardiac rehab – how did he ever have time to work? The crazy thing is that we’ve both been going non-stop and have hardly accomplished a thing! He’s called probably 6 different a/c people and the ones who have bothered to call us back don’t work on mini-splits. The guy we thought was going to do the work hasn’t called back. He also never sent an estimate like he said he would so I’m guessing he isn’t interested. A friend that we trust has a guy in Comanche that will work on mini-splits. Things are a bit different here. He said (think Texas drawl) “Yea . . I should be able to get over there this week.” Vince said “Any idea what day?” Nope!
As Vince was walking out the door, he said “Maybe I’ll become a mini split repairman.” Hmm . . don’t think so!
Then Vince’s voice mail wouldn’t work after he updated his phone. That took three calls to AT&T and they finally had to do something on their end but now his voice mail works.
I suppose my morning was a little more productive. I made breakfast. We sat down to eat and Vince said “Is it really 11 already?” Yep!
I got a Cuisinart ice cream maker for my birthday. The bowl goes in the freezer for 24 hours and just last night I made room in the freezer for it. This morning I mixed up a batch of mango frozen yogurt using yogurt I made yesterday. Tonight we’re going to grill burgers and have frozen mango yogurt and hopefully, a glass of wine!

I have had my ice cream maker for years. If you like Wendy”s Frosty try this recipe.
1 qt Fat Free Half & Half
1 can Fat Free Sweetened Condensed Milk
3 Tablespoons Unsweetened Cocoa
Mix above in a blender. Pour 1/2 of mixture into Cuisinart bowl. Takes about 20 minutes to freeze.
Place other half in fridge. Use within a couple days.
Makes enough for 2 batches.

I also have one of those ice cream makers! They seem to be really popular. I need to put mine in the freezer…I could make ice cream even without a kitchen! (In the middle of a remodel…no upper cabinets or countertops, etc. at the moment.)

I had a freestanding Cuisinart, about 20 years ago, and loved it. When it bit the dust a few years back I hotbed the KitchenAid attachment and love it just as much. Homemade frozen yogurt is my favorite treat!

You are a real make-it-from-scratch kinda woman. =)

I can’t believe you are just now getting an ice cream maker–you have all kinds of kitchen gadgets! I LOVE my ice cream maker and in summer use it WAY too much–I keep the bucket in the freezer all the time. Just a heads up–you have to re-freeze the bucket for 24 hours before making another batch–the voice of experience!
