Vince’s vacuum chamber worked perfectly.
Yesterday we practiced by sealing a half pint of beans so we were fairly confident before we started sealing our freeze dried fruit. It worked perfectly. I think we were able to pack 8 or 9 half pints into the pressure canner. It took two minutes for the vacuum pump to seal all the jars. We set a timer for 2 minutes and that seemed like exactly the right amount of time. That’s a heck of a lot better than messing with those hand held sealers that don’t work half the time.
Everything about the freeze dryer and this thing Vince made has made me very happy and very excited to get today’s batch going.

I’m totally amazed. He could call the freeze dryer company and show them. Perhaps he’d get a part time job out of it! Or patent it and sell it to them. LOL

DH isn’t an engineer, but perhaps he ought to have been…his mind works like that too. When he doesn’t have a part or what he needs to make things work, he makes them. So nice to have a handy hubby. Vince is a keeper, but then, you already know that! Now it’s full steam ahead in your freeze dried adventure!

I’m curious if using the vacuum sealer (with the bags) would work, or would all the food turn to crumbs?

I was thinking that you had a bag vacuum sealer, also. Is there a reason to prefer jars, or am I remembering incorrectly?

Bags get expensive. The jars can be used over and over. Even the lids when vacuum sealing can be used over and over. So, basically, once you have a good supply of jars, there’s no additional cost for using the jars. For foods I want to store long term (probably more than 6 months), I’ll use mylar bags. For anything I’ll be taking to Chad’s or my uncle’s to use within the next 6 months, I’ll use regular clear vacuum seal bags.

When Vince posts his directions for the sealer, I’m sending the link to Stacey so her husband can make one for her. We share a pressure canner that lives at my house, but we can find another one for this purpose, or she can just keep it all the time. She’s the one who uses it these days, often canning for both of us when I buy the thing being canned. This is amazing! It would be great for the granola I buy from her, too.

Requesting Mr Vince to tell us about the contraption he made. Looks like something from a movie – the name is not coming to me. I am just perplexed by how this thing works to vacuum seal jars.
